This recipe for Colorful Cajun Corn came from a special friend.

I, for one, do not enjoy overly spicy food — I enjoy the flavor, but not too much heat! She on the other hand, enjoyed everything spicy.

This corn recipe is full of color and flavor. It gets a lot of its flavor from the sausage. I like to cook with Conecuh smoked sausage, which is made in Alabama. You can buy mild or spicy sausage; your choice of sausage will make this recipe suit your taste buds. 

Colorful Cajun Corn

Ingredients

  • 2 cups frozen diced onion and pepper blend
  • 1 to 2 tablespoons olive oil
  • 1 16-ounce package of frozen sweet kernel corn, thawed
  • 4 plum tomatoes, diced
  • ½ pound Conecuh smoked sausage
  • ¼ cup green onion tops
  • ¼ teaspoon salt
  • ¼ teaspoon pepper

Preparation

Cut sausage into small slices. Cook in a skillet on medium heat for 10 minutes. Sauté onion and pepper blend in hot oil in a large skillet, stirring frequently for 5 to 6 minutes or until tender. Add corn, tomatoes and sausage; cook for 15 minutes, stirring often. Stir in green onions, salt and pepper; cook another 5 minutes. Serve warm.
