Bell peppers and shrimp create a colorful, healthful dish

Posted

Our Bible starts in Genesis: “In The beginning God created…”

He separated salt water from fresh water, He made dry land and planted a garden, and He made animals and fish. He did all of this before he made man. Think about that for a moment. He created and provided food that we would need even before we were born. So many foods are powerful when eaten raw, but still good for us when cooked and seasoned to taste. We could eat from God’s Garden and be healthier than we are today. God gave us foods to eat that would benefit certain parts of our body.

While we are accustomed to seeing green bell peppers in our gardens, bell peppers also come in a wide variety of colors, including yellow, orange and red with the red, orange and yellow being much sweeter than the green. Not only do bell peppers add color to your food — especially the red, yellow and orange ones — but they boost the nutritional value as well. Eat them raw or sauté them as called for in this dish with sautéed shrimp, and enjoy.

Sautéed Shrimp and Peppers

Ingredients

  • ½ cup real bacon bits
  • 10 ounces mushrooms, sliced
  • 1 green bell pepper, deseeded and sliced
  • 1 red or yellow bell pepper, deseeded and sliced
  • 1 red onion, sliced
  • 1 cup sliced scallions, include green tops
  • 1 pound large shrimp, peeled and deveined
  • ½ teaspoon salt
  • ½ teaspoon black pepper
  • Tabasco or other hot sauce to taste, optional

Preparation

Brown the bacon in a large skillet over medium heat. Cook 5 to 7 minutes or until crisp. Increase heat to medium-high.

Add mushrooms, peppers and onions; cook for 7 to 10 minutes or until the vegetables are softened and the mushroom liquid has almost evaporated.

Move the bacon and vegetables to one side of the skillet and add the shrimp. Cook for 3 minutes or until just opaque. Stir all ingredients together. Season with salt and pepper and add Tabasco sauce.

Serve hot with a side salad.

From the scriptures

Spiritual food is essential for all of us, as well as physical food. We should nourish our mind and feed our spirit daily just as we feed our body. To memorize a weekly Bible Verse is a fabulous spiritual food. Try it, and you will see how easy it is to memorize scripture.

Our memory verse for this week is Galatians 6:2: “Commit to the LORD whatever you do, and your plans will succeed.”
