Cook local new potatoes for a quick side dish

I recently had the opportunity to visit my husband’s brother and sister-in-law in Geneva. They are such kind people, and even though my husband is no longer with us, they are and will always be part of my family.

I was given a large bag of freshly dug new potatoes. What a special treat that was. And, as fate would have it, I needed a dish to share with a large group, so, I cooked these new potatoes. They were so tasty and yummy and were gone in a flash!

New Potatoes with Garlic Herb Butter

Ingredients 

  • 1 pound new potatoes
  • 1 head garlic, cut crosswise
  • 1 bay leaf
  • 1 large onion, quartered
  • Salt
  • 4 tablespoons garlic herb butter
  • Freshly ground black pepper

Directions

Put the potatoes, garlic, bay leaf and onion in a large saucepan. Cover with cold water and season generously with salt. Bring to a boil, turn heat to medium and simmer until potatoes are fork tender, about 10 minutes, depending on the size of your potatoes.

Drain and discard the garlic, bay leaves and onion. Peel potatoes if desired. Halve or quarter the potatoes if large. Toss with the butter and season with salt and pepper.

Serve warm with fresh tomatoes and cucumbers.

Hint: I use minced dehydrated pure onion and/or garlic if fresh garlic or onions are not available.
