Corn Fritters: a step above fried cornbread

Yum! Yum! Ole-time corn fritters! These little corn fritters are so good when served with fresh vegetables, but don’t stop there. They are great to serve as appetizers, too. They are perfect for any “bring a covered dish” occasion you may have.

Sprinkle them with powdered sugar and you have an interesting, delicious dessert. Any guest will dig in and come back for more.

Mama always made cornbread in a cast iron skillet. Sometimes she would bake her cornbread in the oven, and other times she would fry patties in a frying pan. Cornbread was a guarantee with fresh vegetables. We always had fresh vegetables; corn, peas, butterbeans, okra, squash, tomatoes, peppers, onions and more.

My mother-in-law added corn to her cornbread batter and made a version of these fritters. She was a good cook, too, and raised six children. However, as good as her cooking was, I always thought my mother was a better cook. 'Nuff said! Everyone loves his/her own mother’s cooking.

Later, as I began to adapt recipes to my family’s liking, I came up with this recipe.

Naturally, my mother and my mother-in-law had fresh corn, and I did not.

You can also eliminate the sugar completely or use a sugar substitute. If you use sweet corn, be careful and do not add a lot of sugar because sweet corn is sweet to taste already.

Now that my family has reduced in size, I seldom make a large batch of fried cornbread or fried corn fritters. I can divide this recipe in half and there will be plenty of fried corn-fritter patties to share. Right now, I am anxiously waiting for fresh vegetables. How blessed we are to live in an area where food is plentiful!

 

Corn Fritters

Ingredients

14.75-ounce can cream style corn

14.75-ounce can whole kernel corn, drained

¾ cup yellow cornmeal

¾ cup all-purpose flour

1 sweet onion, chopped

2 eggs

2 tablespoons milk

½ teaspoon sugar

1 teaspoon salt

2 cups vegetable oil for deep frying

 

Preparation

Mix corn, eggs, onion, salt, sugar and milk together. Stir in cornmeal and flour. Drop batter by spoonfuls into hot, deep oil and fry patties until golden brown. Drain on paper towels and enjoy.

Spiritual food is essential for all of us, as well as physical food. We enjoy two or three meals every day. We should nourish our mind and feed our spirit daily just as we feed our body. Bible verses are fabulous spiritual food. We should look forward to reading our Bible daily; just one or two verses of scripture each day would help feed our spirit.

Our Bible verse for this week is Proverbs 1:7-8: “The fear of the Lord is the beginning of knowledge: but fools despise wisdom and instruction. My son, hear the instruction of thy father, and forsake not the law of thy mother:”
