Dress up fruit easily with a Waldorf Salad recipe

A friend gave me this recipe at least 40 years ago. The original version included miniature marshmallows, and it was sweeter than this version. I made this Waldorf salad for many years, always enjoying it during the holidays.

As I grow older, I’ve begun to cut back on the amount of sugar and sweets I consume, so I’ve removed the marshmallows and added celery. I love the crunch and taste you get by adding celery. I have also substituted the heavy cream for sour cream. This changes the taste just a bit, but both are good. The substitution will also reduce the number of calories in a serving.

This recipe is a must for the holidays — such an easy way to serve fruit!

Other side dishes will be added for several weeks to help you create that special gourmet holiday meal.

Waldorf Salad

 Ingredients

  • 3 cups apples, diced (mix green and red)
  • 1 cup seedless grapes
  • ½ cup celery, thinly sliced
  • ½ cup walnuts, broken into pieces
  • ½ cup sweetened dried cranberries
  • ½ cup pecans, chopped
  • ½ cup mayonnaise
  • ½ cup heavy cream

Preparation

Combine apples, grapes, celery and walnuts. Whip cream and add to mayonnaise.  Fold into fruit.  Sprinkle cranberries and pecans on top. Chill to blend flavors. Yields 8 servings.
