Freeze or can tomato sauce while fresh tomatoes are abundant

Our garden always had tomatoes. We ate them cooked and raw. They are good in so many ways and good for us, too.

This recipe for tomato sauce will make a big batch, enough to can or freeze to use at a later date in any recipe that calls for tomato sauce. This recipe makes approximately 30 servings and is a good way to use those tomatoes from your garden.

Tomato (Spaghetti) Sauce

Ingredients

  • 1/4 cup olive oil
  • 3 medium onions, chopped
  • 2 cloves garlic, minced
  • 12 cups tomatoes, peeled, cored and chopped
  • 3 12-ounce cans tomato paste
  • 3 tablespoons brown sugar
  • 1 tablespoon dried oregano
  • 4 teaspoons salt

Preparation

Heat olive oil in large pan and sauté onions and garlic until tender.Add rest of ingredients, including browned ground beef, and heat to boiling. Reduce heat. Simmer, partially covered, for 2 hours. Stir occasionally.

After it has simmered, cool completely and store in freezer bags or containers suitable for your family. When ready to use, thaw and heat.

If canning in jars, process in a boiling water bath in a covered canner for 35 minutes.

This sauce is good for any dish that calls for tomato sauce.

Use it as a sauce for pasta and as a pizza sauce. Add meat of your choice for your dish. I added 4 pounds of ground beef for this spaghetti sauce. I would add sausage, groud beef, mushrooms, or any fresh vegetable for a great pizza.

Tip: You could put all ingredients into a crock-pot and cook on medium for 6 to 8 hours. Couldn’t be easier than that.
