Make a classic meatloaf for an easy, filling meal

One of the first meals I learned to cook after starting a family was meatloaf, mashed potatoes and gravy. There are so many ways to prepare meatloaf, and all seemed to be good. I was never concerned about having the right ingredients—my mother always used anything she had in her kitchen. So, when I was on my own and learning to cook for a husband, I also used the ingredients I had in my kitchen.

I used home canned tomatoes, a can of crushed tomatoes, ketchup and even tomato soup to give meatloaf that tomato taste. It’s hard to make a bad meatloaf.

Now, instead of making mashed potatoes with gravy, I like to roast potatoes to go with my meatloaf. You could add small potatoes on the side of the pan, and as your meatloaf cooks, the potatoes will cook too. Add a salad or vegetable, and you have a complete meal. If you don’t have breadcrumbs, make your own. Crush a piece of toast or cold biscuit, either will be a good substitute for breadcrumbs. Don’t have French’s Fried Onions, why not use a regular onion, sliced or diced? Use your imagination—cook and enjoy.

Louise’s Meatloaf

Ingredients

  • 1 can (10 ¾ ounces) condensed tomato soup
  • 2 pounds ground beef
  • 1 can (2.8 ounces) French’s Fried Onions
  • 2 eggs, beaten
  • 1 packet onion soup mix
  • ½ cup nuts, chopped
  • 1 tablespoon Worcestershire sauce
  • ½ cup breadcrumbs

 Preparation

Preheat oven to 350 degrees.

Mix together the soup, beef, ½ the French’s Fried Onions, eggs, onion soup mix, bread crumbs and Worcestershire in a large bowl. Place the mixture into a baking dish and shape into a loaf.

Bake 1 ½ hours or until the meatloaf is done. Remove from oven, sprinkle remaining French’s Fried Onions on top and return to oven. Bake for an additional 3 to 5 minutes.
