This is such a pretty cake for Easter brunch or dinner. Adding 1 drop of yellow and 3 drops of green food coloring will give you a mint green color. This soft color of green will blend perfectly with those colored Easter eggs, freshly cut spring flowers and those pastel colors we all like to use when decorating for Easter.
You could add food coloring to your cake batter the same as you do to your frosting, but I prefer not to go “all green.” When baking this cake I decided to bake two loaf pans rather than using my tube pan, but either will work.
I have a neighbor and friend with a birthday and wanted to give her a cake. After baking, frosting and photographing this kiwi lime pound cake, I carried it to Bea and wished her happy birthday. When I ate the frosting left in the mixing bowl, I wanted more. It was so tasty! Guess what? I kept the slice from the end of the cake where I had cut it before I made the photograph. So Bea did not get the entire cake — sorry Bea! George also had to taste to make sure it was OK; another slice gone.

This is a basic pound cake that you can freeze. After your cake is baked and cooled, before you add frosting, wrap the cake in foil, label with the date and put it into your freezer. It will last for months, and it will be easy to add frosting when you are ready to thaw and eat. Enjoy this pound cake with or without frosting, served warm with a cup of coffee.
Kiwi Lime Pound Cake
Ingredients
2 cups sugar
2 sticks butter
4 eggs
2 cups all-purpose flour
1 teaspoon baking powder
¼ teaspoon salt
¼ teaspoon soda
½ cup evaporated milk
¼ cup lime juice
1 teaspoon vanilla extract
1 teaspoon almond extract
Kiwi Lime Frosting
Ingredients
1 stick butter
1 ½ teaspoons lime zest
1 teaspoon vanilla extract
2 cups powdered sugar
3 tablespoons lime juice
1 tablespoon milk
Food coloring – 1 drop yellow; 3 drops green
Preparation for Kiwi Lime Pound Cake
Preheat oven to 350 degrees. Grease and flour two loaf pans. Cream sugar and butter together. Add eggs, one at a time, beating after each addition. Sift flour, salt, soda and baking powder together. Add flour mixture to creamed mixture. Add milk, lime juice, vanilla and almond extract and mix well. Pour into prepared pans and bake for 50–60 minutes or until toothpick inserted into center comes out clean.
Preparation for Kiwi Lime Frosting
Beat softened butter, lime zest and vanilla together until creamy. Alternately add powdered sugar, lime juice and milk to creamy mixture, 1 tablespoon at a time. You may need to add another teaspoon of milk. Beat at low speed until desired consistency is received. Add food coloring and beat on low speed until coloring is mint green. Spread on cake and garnish with lime and kiwi slices.

Spiritual food is essential for all of us, as well as physical food. We enjoy two or three meals every day. We should nourish our mind and feed our spirit daily just as we feed our body. Bible verses are fabulous spiritual food. We should look forward to reading our Bible daily; just one or two verses of scripture each day would help feed our spirit.
Our Bible verse for this week is John 11:25-26: “I am the resurrection and the life. Whoever believes in me, though he die, yet shall he live, and everyone who lives and believes in me shall never die. Do you believe this?”
