Pinzone's Italian Downtown is a partnership bringing two passionate chefs together in a common goal to bring to you an authentic and bold Italian Cuisine. Mike Pinzone and Scott Dumas decided on Historic Downtown Fairhope, Alabama because its quaint historic atmosphere.

Historic Downtown Fairhope reminded Mike Pinzone of small communities in Italy. For Mike Pinzone, famous for his Papa's Pizza theme, clearly understands that it is this personal experience that inspires him to embrace Italian history, culture and the preservation of Italian cooking practiced at Pinzone's Italian Downtown. In addition to Pinzone's Italian Downtown in Fairhope, Mike also owns Papa's Pizza where his New York Style pizzas are famous throughout the Gulf Coast as well as other Pensacola Bay area businesses. Many visitors will tell you that their visit is not complete without having eaten at Papa’s Pizza.

Scott Dumas who's family stretches from Pensacola through Pascagoula, MS. He started his career in the 90's at Southern Traditions in Biloxi, MS. He initially trained under chefs Frank Burgess and Joe St. Paul where Chef Dumas says that he learned methods rather than recipes. It is this philosophy that a true Chef must understand the ingredients and methods of any style of cooking before you can master that style or recipe. Italian cooking is the prime example of that philosophy.

Before partnering with Mike Pinzone, Chef Dumas visited Italy to train under Chefs there where he learned their methods and the culture of true Italian cooking. Chef Dumas, bringing back his experiences from Italy now wants to focus on the vast 2500 year history of Italian cooking to create his unique and authentic cuisine at Pinzone’s Italian Downtown. Chef Dumas's philosophy is that with Italian food, its about simplicity and having the unique and bold flavors speak for themselves.
