Prepare a peanut butter pie for a rich treat

Growing up, we didn’t always have the nuts you can purchase these days, but we always had peanuts.

We grew peanuts on our farm, so we ate peanuts raw, boiled and parched; and we cooked with peanuts, too. We used peanuts is so many things — cakes, pies, salads and peanut butter. So many foods include peanuts.

This pie recipe is one of the quick and easy recipes shared with me years ago. If you love peanuts and peanut butter, you will enjoy this pie. When I cook it, I use a pre-made graham cracker crumb crust. It’s also excellent if you use a pre-baked piecrust; the choice is yours. It is an extremely rich pie, so cut small slices when you serve, and have a glass of milk ready to enjoy with it.

Peanut Butter Pie

Ingredients

Filling

  • 2/3 cup sugar
  • 2 ½ tablespoons cornstarch
  • 1 tablespoon all-purpose flour
  • ½ teaspoon salt
  • 3 cups milk
  • 1 tablespoon butter
  • 4 egg yolks, slightly beaten
  • 1/3 cup peanut butter (smooth or crunchy)
  • 1 9-inch pie shell, baked, or a graham cracker crust

Meringue

  • 4 egg whites
  • 1/8 teaspoon salt
  • ¼ teaspoon cream of tartar
  • 6 tablespoons sugar

Preparation

Filling

Combine sugar, cornstarch, flour and salt in a medium saucepan. Add milk and butter and cook over low heat until mixture thickens, stirring constantly. Cook for 2 more minutes. Remove from heat.

Stir a small amount of hot mixture into slightly beaten egg yolks. Mix well. Return to hot mixture and cook for 1 minute. Stir constantly. Add peanut butter and stir until well blended. Pour into pie shell.

Meringue

Preheat oven to 375 degrees. Combine egg whites, salt and cream of tartar. Beat until peaks began to form. Continue to beat and gradually and add sugar until stiff peaks form. Pour on top of pie. Brown in oven for 10 minutes or until lightly brown.
