Growing up on a farm in south Alabama, peanuts were plentiful. I have and will share recipes with peanuts — all so tasty, and good for you, too.
However, when we were lucky to have other nuts, it was a special treat. Pecans were a welcomed change for us and this recipe for pecan pralines is one candy recipe we all enjoyed.
I’m certain the original version of this recipe originated in New Orleans; they are noted for their pralines. This recipe has been cooked and shared many times, particularly around holidays or special occasions.
I recently had the opportunity to share this with several Snowbird friends. They seemed to enjoy these pralines, and I hope you will, too.
Pecan Pralines
Ingredients
Preparation
Combine sugars and cream in a two-quart saucepan.
Cook over medium heat, stirring constantly until mixture comes to a full boil. Boil one minute and remove from heat. Stir in pecans and vanilla extract.
Beat about two minutes or until mixture begins to crystallize on the side of the pan. Drop by tablespoons full onto buttered waxed paper or aluminum foil. I used baking cups — easy to use and no clean up.
Work quickly before mixture sets. Store in a covered container.
From the scriptures
Spiritual food is essential for all of us, as well as physical food. We should nourish our mind and feed our spirit daily just as we feed our body. To memorize a weekly Bible Verse is a fabulous spiritual food. Try it, and you will see how easy it is to memorize scripture.
Our memory verse for this week is Romans 8:28 (ESV): “And we know that for those who love God all tings work together for good, for those who are called according to His purpose.”
