I first used this recipe in the 70s; a version of it was published in a Pilot Club cookbook with the contributing person being none other than Rosalynn Carter. I was impressed she would contribute some of her favorite recipes to be included in the Pilot Club Cookbook.
This recipe has been revised a bit, and it is so easy to prepare. It's a favorite of mine during this time of year, when strawberries are more affordable because they are in season. This recipe makes 12 servings, so it's perfect to serve at a party or family gathering.
This easy-to-make strawberry cake is on page 84 of my cookbook, “Love to Cook,” which I wrote and published in the 90s.
Strawberry Cake
Ingredients
Preparation
Preheat oven to 350 degrees. Grease and dust with flour 2 9-inch cake pans.
Combine cake mix and Jell-O. Add oil and mix well. Add eggs one at a time, beating after each addition. Add strawberries and mix well.
Pour into prepared cake pans and bake for 25 minutes or until toothpick inserted into center comes out clean.
Yields 12 servings.

Combine butter and confectioners' sugar and beat until smooth. Add strawberries and mix until combined. Frost cake after it has cooled completely.
