This strawberry pie made with fresh strawberries is so quick and easy. Use a prepared piecrust or make yours from scratch. Prepare fresh whipped cream for the top of your pie or use a can of whipped cream and frozen whipped topping.
“From scratch” recipes the way Mama always cooked are time-tested and are good; however, there are so many prepared foods on the market that are acceptable. You can use either method to make this quick and easy fresh strawberry pie.
Fresh Strawberry Pie
Ingredients
Preparation
In a large bowl, mash enough strawberries to equal 3 cups. In a large saucepan, combine sugar and cornstarch. Stir in mashed strawberries and water. Bring to a boil over medium heat. Stir constantly and cook for 2 minutes or until the mixture thickens.
Remove from heat and add a few drops of red food coloring, if desired. Pour into a large bowl. Remove from heat and stir constantly for 20 minutes.
Mixture should be slightly warm, not cold. Fold in remaining strawberries. Pour into prepared graham cracker pie shell and chill until firm, about 2 to 3 hours. Top with whipped cream of your choice when ready to serve.
