During blueberry season, I froze several packages of blueberries. I used my frozen blueberries for this pie rather than fresh blueberries, and it still tasted great.
I freeze any fruit when in season and use in any recipe that calls for fresh fruit. If you use frozen berries from the grocery store, you will need to adjust the amount of sugar and flour. I’ve made a lot of recipes using berries, especially blackberries.
Fresh Blueberry Pie
Ingredients
Preparation
Preheat oven to 400 degrees.
Sprinkle berries with lemon juice and set aside. Place half of pastry in a 9-inch pie plate according to package directions. Combine sugar, flour, salt and cinnamon; add to berries and stir. Pour into pasty shell and dot with butter.
Unfold remaining pastry and place over filling, seal and crimp edges. Cut slits in top of crust to allow steam to escape. Brush top of pastry with beaten egg and sprinkle with sugar.
Bake for 35 minutes or until golden brown.
