Use prepared piecrust and jam for a quick, dainty breakfast

Tarts have been in my family for as long as I can remember. They were fried in a skillet with grease or were baked in the oven as little pies. Any fruits available were used — blueberries, strawberries, blackberries or peaches.

As life goes on, things will certainly change, and our lives will undoubtedly get busier. So, instead of making dough for these tarts like we used to do, a prepared piecrust is just perfect. And, instead of picking fruit and adding sugar, you can use a can of pie filling or jar of jam.

Either way, so many of the ingredients are now prepared for us, making life in the kitchen so much easier than it used to be. It’s not difficult at all and could actually be fun to cook.

Baked Breakfast Tarts

Ingredients

1 14.1-ounce box rolled refrigerated pie crust

½ cup strawberry pie filling or jam

1 cup confectioner’s sugar

1 tablespoon milk

1 tablespoon melted butter

Preparation

Preheat oven to 425 degrees. Spray a round pizza cooking stone (or round pizza pan) with cooking spray; I like to use Pam. You can also use parchment paper.

Unroll one piecrust and place on the cooking stone or pan. Spray lightly with cooking spray. Unroll the second piecrust and place on top of first piecrust. Cut through both piecrusts with pizza cutter (or knife) and pull the cut pieces to the edge of the stone or pan. You should have 6 or 8 triangle-shaped pieces.

Lift the top piecrust piece and place one or two tablespoons of pie filling or jam on the bottom piece. Crimp edges together with a fork. Repeat process until all piecrusts are filled with pie filling or jam and edges are crimped. Brush each tart with melted butter.

Bake for 8 to 10 minutes, until the top is lightly browned. Cool for 5 minutes.

Mix together the confectioners’ sugar and milk until it is like thick syrup. Spread this glaze over the tarts. Cool slightly before serving.
