With a family of eight, there seldom were leftovers at our table. But it’s hard not to have leftovers when your family is reduced over the years to two and then to one.
I have searched for recipes that use leftovers after holiday meals and have found a lot. I’ve used several — salads, sandwiches, potpies and more ideas have been used and filed away. Holiday meals make wonderful leftovers.
I created this recipe for my own use and find it extremely tasty. I have used a number of substitutions, which makes this recipe unique. Feel free to use what you have on hand. I enjoy the simplicity of cooking casserole dishes; just add a salad, and you have a meal.
This is a good casserole and a great way to use your leftovers from that Thanksgiving feast.
Turkey casserole using leftovers
Ingredients
Preparation
Preheat oven to 350 degrees.
Spray a baking dish with cooking spray. Layer dressing on bottom of pan. Next, add turkey and then add vegetables. Pour gravy and chicken broth over top and then sprinkle with breadcrumbs.
Bake for 30 minutes or until hot all the way through.
Remember, you are using leftovers. If you do not have breadcrumbs, use stuffing mix or even mashed potatoes to spread on top. Either one will make a nice crust. If you don’t have leftover vegetables like corn, carrots and peas, use frozen vegetables.
If you don’t have leftover dressing, substitute with hash brown potatoes. You could use ham instead of turkey. Your dishes for Thanksgiving were good when you prepared them, and they will be tasty when cooked together.
